Tasty Thursday - Crockpot Apple Cake

A few weeks back we went to our first OSU tailgate of the year.  Food is a big part of tailgating and us ladies love to have a delish spread to enjoy for the near 6 hours we spend on a Saturday.  Since we had recently been apple picking I wanted to use my apples as part of my dish but didn't know what to make.  So I pulled up my trusty friend Pinterest and found this delish recipe that was so simple to through together just before heading out the door.  And it calls for my other trusty friend, the crockpot!  So here is a simply delicious apple cake you can make for nearly any occasion (including breakfast).  Enjoy!

1 C flour (1/2 C wheat, 1/2 C white)
3/4 C brown sugar
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
3 large apples, chopped
2 eggs, beaten
2 tsp. vanilla


In a bowl mix:  flour, sugar, baking powder, cinnamon and salt.  Peel, slice, and dice your apples, then coat with the flour mixture.  Mix the eggs and vanilla in a small bowl.  Pour the egg mixture over the floured apples. Pour/spoon into a greased crockpot.  *NOTE:  Batter will be extremely thick.  Cover and cook on high for 2 hours or until toothpick comes out clean.
