Tasty Thursday: Do You Know The Muffin Man?
Scratch that, do you know the Muffin WOMAN?! It would be me. I made these night before last. I’ve been craving some homemade blueberry muffins and thought I should just get in the kitchen and make them. What better reason than Tasty Thursday? This is the final product (yum-o!) with directions below.
½ c softened butter
1 c sugar
2 eggs, beaten
½ c milk
2 c flour
2 tsp baking powder
½ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
2 c blueberries (frozen are fine)
2 tbl sugar
Set oven to 375 degrees. Cream together butter and sugar. Combine beaten eggs and milk to creamed mixture (looks soupy at this point). In a separate bowl combine dry ingredients and add slowly to the creamed mixture. Fold in blueberries. Fill muffin cups 2/3 full. Add sugar to top of each muffin. Bake for 20 minutes.
Variations: I used ½ frozen ½ fresh blueberries. I didn’t have nutmeg so I omitted. I used wheat flour in place of white flour.
