Tasty Thursday - Country Breakfast Casserole

I love breakfast casseroles.  For dinner?  Why not?  So last night I whipped this together.


Frozen hashbrowns
Sausage – cooked
Shredded cheese
4-6 eggs
Splash of milk
Green onion

Spray casserole pan liberally with cooking spray.  Apply the first layer of frozen hashbrowns.  Then apply the shredded cheddar and cooked sausage.  In a separate bowl whisk together the eggs, milk and salt and pepper.  Add this mixture to the casserole.  Sprinkle with chopped green onion.
Bake for 30-40 minutes at 360.

Want to make this bake even tastier?  Make creamy sausage gravy to add to the top.

2 tablespoons butter
2 tablespoons flour
1 ½ cups milk
¼ cup sausage – cooked

Over medium-high heat melt butter and add flour to make a rue.  Very slowly incorporate the milk and whisk completely until the mixture has been combined and there are no lumps.  Bring to boil for 5 minutes and reduce heat.  Add sausage and simmer on low heat as casserole cooks.  Pour over cooked casserole.

 Don't ask about calorie content.  I did tell you it was a COUNTRY casserole.  :)
