Tasty Thursday - Black Bean Soup

Stick with me now.  When I first saw this on Pinterest I thought, 'hmm, this would be fairly healthy and easy to make, but I think it may be bland'.  I was partial right or partially wrong, depends on if you're a pessimist or an optimist.  I choose to be an optimist, at least for the day.

Surprisingly this had the most amazing flavor.  Even if you added no toppings at all it would be an amazing soup. I love that this soup is a basic soup and you can customize it to what you like.  For example, I'm an equal opportunity food eater, I'll give everything a try.  Rick on the other hand isn't so fair and doesn't eat sour cream or anything too spicy.  Addie can't handle anything too spicy yet.  So you start with the base and then pile on the toppings to your liking.

Ingredients
2-3 cans black beans (do not drain)
2 cans chicken broth
1 tsp. salt
3 cups cooked rice
avocado, sliced
grated cheese
tortilla chips, crushed
sour cream


Directions
Blend together the1 can black beans with 1 can of chicken broth. Add blended mix, other can of chicken broth, remaining can(s) black beans and salt to a large pan. Cook on medium heat until nice and hot. In individual bowls, layer the rice, then the soup, then the other toppings.

NOTE:  I altered the Favorite Family Recipe slightly as I was rushing and read the recipe wrong.  They blend all cans black beans with 1 can broth so the soup would be thicker.  I haven't tried it their way since we just made it but I'm sure it would still be fabulous!
