Pumpkin Pie Granola Mix

I saw this on Pinterest a couple weeks ago and it caught my attention quickly.  Partly because I thought it would be a good treat for Addie to snack on, but also because it's healthy which means I can also snack on it between workouts without feeling terrible about snacking.



Ingredients
4 cups rolled oats
2 tsp ground cinnamon
1 tsp pumpkin pie spice
1/2 cup sweetener (Stevia or other baking sweetener)
1/2 tsp salt
1 tsp baking powder
3/4 cups pumpkin
1/2 cup applesauce (unsweetened)
3 tblsp honey

Mix-ins:  1/2 cup white chocolate chips & 1 cup honey teddy grahams (slightly crushed)

Preheat oven to 325 degrees.  Line a baking sheet with foil and spray with non-stick cooking spray.  Mix all dry ingredients in a bowl and wet ingredients in another.  Combine the wet into the dry until everything is combined and oats are coated with wet ingredients.

Spread granola on baking sheet and bake 20 minutes.  Remove from oven and stir granola around, place back in oven and bake an additional 20 minutes or until granola is crisp.  Let granola cool completely on baking sheet.  Combine mix-ins to granola and store in airtight container for up to a week.
