Tasty Thursday: Sweet & Sour Chicken

You're going to love this one.  It's one of my favorite Pinterest finds for dinner and the hubs loved it.  It tasted just like restaurant style sweet & sour chicken and is superb!  Big thanks  to Six Sisters' Stuff for posting this one because it's amaze-balls (Thanks Bethenny Frankel)!

Here's what you need:

3-4 boneless skinless chicken breasts (cubed)
salt & pepper
1 cup cornstarch
2 eggs, beaten
1/4 cup oil (I used evoo)

Sauce
3/4 cup sugar
4 tablespoons ketchup
1/2 cup vinegar
1 tablespoon soy sauce
1 teaspoon garlic salt

Preheat oven to 325 degrees.  Season chicken with salt & pepper.  Dip chicken into cornstarch then to egg batter.  Heat oil in a pan and drop chicken into oil.  Brown chicken but do not cook through.  Place chicken in a greased 9x13 baking dish.  Mix all sauce ingredients completely then evenly pour over chicken.  Cook chicken for an hour turning every 15 minutes.  The last minute or so I suggest turning the broiler on to crispen up the chicken.  Make sure to watch closely.  Serve with rice of your choosing.  We like ours fried!
